How is saffron harvested?
Saffron is obtained from the delicate stigmas of the saffron crocus (Crocus sativus). Harvesting these threads is carried out entirely by hand and is extremely labour-intensive, as each flower produces only three of these precious stigmas. It takes approximately 150 000 flowers to produce one kilogram of saffron, making it one of the rarest and most expensive spices in the world. Saffron quality is assessed by its colour intensity, with crocin content being responsible for the colouring.
